I don't know about you, but I love the combination of peanut butter and chocolate - it's a famous combo in Reeses' and it's a popular flavor. They're a healthier muffin overall, and great for any day! If you have celiac or prefer gluten-free options, these are a great choice as well.There are only 7 ingredients, you mix them all in one bowl, and they only take 20-25 minutes to bake! I think you should probably go try them out, right? One more excuse to make them - there is almost 10 grams of protein in every muffin! That's right - they're a healthy and filling start to your day (or snack or dessert!). Go ahead, try these out!
In a large bowl, add honey, eggs, apple cider vinegar, baking soda, and vanilla. Whisk until combined.
Add peanut butter, and mix in until completely incorporated.
Add chocolate chips, and mix in.
Prepare a muffin tin with paper liners. Separate batter into 8 liners.
Bake muffins for 20-25 minutes, until toothpick comes out clean. Please note that if you hit a chocolate chip, that will stick to the toothpick, you just need the muffin itself not to be wet anymore.
Remove from oven and let cool.
