Pumpkin Pie Smoothie
Alex Kornswiet
I can always go from Pumpkin Pie. And while I would absolutely eat Pumpkin Pie for breakfast, this smoothie is definitely a healthy, quicker version - and a perfect start to the week! And not only is it delicious on it's own, but you can also use it as a base for oatmeal! I mixed the smoothie in with some instant oatmeal (my favorite is this one - Trader Joe's Instant Oatmeal), heated it in the microwave for 45-60 seconds, and mixed. It was SO good and extra filling for breakfast if you need more than just a smoothie.
- 1 banana
- 1/4 cup pumpkin puree*
- 4 dates roughly chopped
- 1 teaspoon cinnamon
- pinch of ground ginger
- pinch of nutmeg
- pinch of all spice
- pinch of cloves
- 1/2 cup milk of choice lowfat, whole, almond, coconut, etc.
Place all of the ingredients in a blender. Blend until smooth.
Enjoy!
Note - for oatmeal, add the blended smoothie to one packet of instant oatmeal of your choice. Heat in microwave for 45-60 seconds. Stir and enjoy!
*You can also use a 4 oz jar of Pumpkin puree from the baby section - I have Beech Nut Pumpkin on hand because I have a young child, and this is JUST pumpkin - and that way you don't have to open a whole large can!
Note - for oatmeal, add the blended smoothie to one packet of instant oatmeal of your choice. Heat in microwave for 45-60 seconds. Stir and enjoy!
