Healthy Tuna Salad

One of my favorite go-to lunches for a kick of protein and flavor is tuna salad, but it can be loaded with mayo. I personally like a lighter version, so I made this healthier option!

Total Time 8 mins
- 1 can tuna fish in water
- 2 tablespoons light mayo add more to taste
- 2-3 tablespoons dijon mustard to taste
- 1/4 red onion diced
- 1 large stick of celery diced
- 2 slices wheat bread or bread of choice*
- 1/4 avocado sliced
- Salt and Pepper to taste
Add tuna, light mayo, dijon mustard, red onion, and celery to a small bowl. Mix until combined.
Toast bread to desired toastiness ;)
Place half of the tuna salad on each slice of toast
Finish off with a few slices of avocado, salt, and pepper
Enjoy!
*This makes 2 open-faced tuna salad's on regular loaf-sized bread. If you have larger slices or want a full sandwich, if may make more or less.
