Healthy Tuna Salad

One of my favorite go-to lunches for a kick of protein and flavor is tuna salad, but it can be loaded with mayo. I personally like a lighter version, so I made this healthier option!

Ingredients
  

  • 1 can tuna fish in water
  • 2 tablespoons light mayo add more to taste
  • 2-3 tablespoons dijon mustard to taste
  • 1/4 red onion diced
  • 1 large stick of celery diced
  • 2 slices wheat bread or bread of choice*
  • 1/4 avocado sliced
  • Salt and Pepper to taste

Instructions
 

  • Add tuna, light mayo, dijon mustard, red onion, and celery to a small bowl. Mix until combined.
  • Toast bread to desired toastiness ;)
  • Place half of the tuna salad on each slice of toast
  • Finish off with a few slices of avocado, salt, and pepper
  • Enjoy!

Notes

*This makes 2 open-faced tuna salad's on regular loaf-sized bread. If you have larger slices or want a full sandwich, if may make more or less.
