Happy Wednesday! I don’t know about you, but I love the combination of peanut butter and chocolate – it’s a famous combo in Reeses and it’s a popular flavor. It’s currently Passover, so we’re restricted from anything with flour, corn, beans, and more in our household – so I wanted to get creative – and I’m very happy with these muffins! Not only are they perfect for this week, but they’re a healthier muffin overall, and great for any day! If you have celiac or prefer gluten-free options, these are a great choice as well.
We have a toddler, and he loves these muffins – and I don’t feel bad giving them to him! Another great thing is the ingredients are all common items to have in your house – so you can probably go make these right now! There are only 7 ingredients, you mix them all in one bowl, and they only take 20-25 minutes to bake! I think you should probably go try them out, right?
One more excuse to make them – there is almost 10 grams of protein in every muffin! That’s right – they’re a healthy and filling start to your day (or snack or dessert!). Go ahead, try these out!
Flourless Peanut Butter Chocolate Chip Muffins
Ingredients
- 3 tablespoons honey
- 2 eggs
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 cup peanut butter
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350 degrees F.
- In a large bowl, add honey, eggs, apple cider vinegar, baking soda, and vanilla. Whisk until combined.
- Add peanut butter, and mix in until completely incorporated.
- Add chocolate chips, and mix in.
- Prepare a muffin tin with paper liners. Separate batter into 8 liners.
- Bake muffins for 20-25 minutes, until toothpick comes out clean. Please note that if you hit a chocolate chip, that will stick to the toothpick, you just need the muffin itself not to be wet anymore.
- Remove from oven and let cool.
