I’m always looking for ways to make delicious things a little bit healthier – not because I don’t enjoy dessert or think it’s not okay to indulge – but because I have a 2 year old and want to be able to offer him yummy treats that are on the healthier side. He loves basically all food, but understandably, loves sweet treats. And that’s where the inspiration for these blueberry oat bars came from! He loves blueberry, and these are a delicious treat, but also has added nutrients. A bonus is that it’s a gluten free recipe – although none of us in our household need or want to be gluten free, we do have family members with celiac, so this is a great recipe to have on hand!
These blueberry oat bars are best cooled completely, and even chilled a bit in the fridge, to maintain their shape. If you want to enjoy them warm, this recipe can also be used for a healthier blueberry crisp – served on it’s own, or with a scoop of yogurt or ice cream for a delicious breakfast or treat! This recipe can be used in myriad ways – and they’re all delicious. Basically, you need this in your life 🙂
Blueberry Oat Bars
Ingredients
Quick Blueberry No-Cook Jam
- 1.5 cups blueberries fresh is best, or thawed from frozen
- 2 tablespoons lemon juice
- 1.5 tablespoons ground flax seeds
Oat Base
- 1 cup almond flour ground almonds – blanched or not
- 1 cup old-fashioned oats
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup unsweetened apple sauce
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
Topping
- 1 cup old-fashioned oats
- 1 tablespoon melted coconut oil
- 2 teaspoons ground cinnamon
Instructions
Quick Blueberry No-Cook Jam
- Put blueberries and lemon juice in a medium bowl. Smash the blueberries with a fork until all are mashed – but doesn’t need to be completely macerated.
- Add ground flax seed, stir to combine.
- Let sit to thicken while preparing the oat base.
Oat Base and Prep
- Preheat oven to 325 degrees F. Spray a 9″ x 9″ square pan (or 8″ x 8″ for thicker bars) with olive oil or vegetable oil spray.
- Combine all ingredients in a large bowl. Stir until completely mixed.
- Pour the mixture into the prepared pan, and press down with a spoon until it’s in one layer across the bottom of the pan.
- Add prepared blueberry jam in a layer on top of the oat base.
- Prepare the topping by mixing the ingredients in a small bowl, and sprinkle in a layer on top of the blueberry jam.
- Bake for 30 minutes.
- Let cool or enjoy warm (it won’t be set up completely if warm, but still delicious – see above for ideas)!
